Winning chef recipe #1: Marinated Green Bean Salad

We proudly introduce Chef Ruben “Zack” Sanchez, one of the winners of Enlivant’s annual chef recipe contest. All chefs know that inspiration can come from anywhere. For Sanchez’s Marinated Green Bean Salad, it came from the “official” drink of a Sunday morning patio brunch.

Wanting to celebrate the fresh air of the outdoors, as well as what he saw in the glasses on each table around him, Sanchez mixed together fresh ingredients —celery, olives and tomatoes—to create a dish that was both refreshing and original. 

A chef for seven years, Sanchez enjoys working at Enlivant because he feels “loved and trusted” by the residents. He returns that love by putting his heart into every meal. We think this recipe would be a great addition to any Thanksgiving menu. Give it a try and tell us what you think.
