Stuffed Pepper Soup
Audrey of Copper Place wasn’t handed a recipe for Stuffed Pepper Soup – she invented it! And ever since, she has been serving it with Italian bread to her family for a long time. Audrey sticks to her original recipe but doesn’t mind when family members put their own spin on it. “My daughter Mary likes to sauté the onions and bell pepper before adding them in to simmer with the rest of the soup,” she says.
