Winning Resident Recipe: Zucchini & Beef Casserole

The winning entrée in our Resident Recipe Contest is unlike any dish you’ve tried before. It’s unique and so tasty. Florence Daniel from Swan Place in Carroll, IA got this recipe from her daughter many years ago, and has now made it her own. Her daughter had grown zucchini and asked Florence to make the recipe for her, and it was a delicious success. Florence doesn’t even like zucchini, but she loves this dish, so you know it is good!
